  • 4 lbs chicken (skinless)
  • 10 cups water
  • 1 onion, chopped
  • ⅓ cup barley
  • 1 can (10.5 oz) condensed chicken broth
  • 7 leeks, sliced
  • 2 stalks celery, chopped
  • 1 spring fresh thyme, chopped
  • 1 tbsp parsley, chopped
  • 1 tsp salt
  • ½ tsp pepper
Instructions
  1. In a large pot over high heat, combine the chicken, water, onion and barley
  2. Bring to a boil, reduce at to low and simmer for one hour
  3. Remove cooked chicken, and chop ino bite sized pieces
  4. Return to the pot
